If you’ve ever had Latin food from the Caribbean, you know just how delectable traditional dishes can be, and you just might find something familiar here to re-create in your home kitchen. Puerto Rico: The land of plantains, pork, and sofrito. While the island is United States territory, its food pulls influences from Europe, Africa, and the Caribbean to create a cuisine all its own. Puerto Rican food embodies the spirit of island cuisine, focusing on fresh fish, tropical produce and large family-style meals surrounding the grill. Pork is king and we’ll be serving it with a chicken and mango salad. Oh, and keep in mind that it’s not a meal without plantains!
As you arrive, you will be greeted with a glass of Sangria – it sounds like a good start to the evening. Vicky has come up with a menu filled with island flavors—and a couple of tricks you’ll be happy to have for your own backyard parties.
